1 ripe avocado
2 large eggs
1 tbsp olive oil
Salt and pepper to taste
1 tbsp chopped chives
Instructions:
Slice the avocado in half and remove the pit.
In a skillet, heat the olive oil over medium heat and cook the eggs sunny-side up.
Place the eggs on top of the avocado halves.
Season with salt, pepper, and chives.
